About
Cousine (started in 2010) are Jessie van der Linden and Vera Ramuz, two cousins spending at least 80 percent of the hours a day on food, by eating it, cooking it, thinking it or talking about it.
Cousine was founded in our cosy kitchen in the Kanaalstraat (Amsterdam) and since we moved in eight years ago, this favorite place of the house has served as a junction where food, art, music and languages intertwined. When we are not in the kitchen, it’s very likely we are somewhere else around the world in search of new inspiration, recipes and products. Most of our ‘culinairy knowhow’ is rooted in this research and experience from all over the world that has resulted in a ‘boutique’ catering establishment that stands for everything that is fresh, colourful, healthy and tasty.
Cousine is not only fueled by our passion for food, but also by our interest in how food functions in today’s society, on both a theoretical level (through our Master’s programmes at the UvA and UU) and our being involved in sustainable food organizations such as the Youth Food Movement.
We hope you will experience all this in every bite, sight, and sensation from our kitchen.
Jessie about Vera
Before falling asleep, Vera (27) has already decided what to prepare for breakfast the next morning and as soon as her alarm rings, she’s ready to make and serve us one of her new creations. She’s never made the same breakfast twice! This is also typical for her way of cooking; Vera’s always in search of new flavours, new combinations and new (or improved) dishes. In her cooking she focusses on healthy, local and fair ingredients. Graduated in art history, she concentrates on the little details of a plate and turns dishes into small pieces of art. She creates the most photogenic plates and is always focussed on the combination of colours in her food.
She’s addicted to hummus and that is the only dish she’s willing to prepare every day. Israeli friends taught her all the treats and tricks and after a lot of practicing she now is able to turn every vegetable into hummus: pumpkin-orange hummus, beetroot-wasabi hummus, sweet potato hummus and so on. If I had to describe Vera in 5 ingredients, it would therefor be tahini to start with, followed by dates, lemon, almonds and pomegranate to top everything off in colour.
Vera about Jessie
Jessie (28) seems half Italian. In fact she is not. Both her looks (medium height, dark curly hair, dark eyes) her fluency in the Italian language and especially her great cooking skills would make you think she is. She was inspired by her mother to start cooking at a very early age, however, Jessie’s real passion for food and cooking had been incited during her exchange year in Rome, where she scoured the local markets in search of products she had never tasted before and travelled all over the country to meet the mothers of her friends to cook with them. These skills she’s brought back to our kitchen in Amsterdam. She’s by far the best bread-maker of the two of us, and does not schrink from preparing traditional, hearty meat dishes. She excels in ‘spontaneous’ cooking, in a wink of an eye she turns a few fridge-leftovers into a lovely dish. If I would have had to describe her in 5 ingredients or products those would be: oysters, pistachios, lemon, honey and good, grassy Italian olive oil.
